'Nduja Pasta
A simple, fiery Calabrian sauce: tomatoes with 'nduja, the soft, spicy pork spread, melted through at the end.

Method
- Put a large pot of water on to boil and salt it generously. Meanwhile, heat the oil and whole garlic clove in a large frying pan.
- When the garlic starts to sizzle, add the tomatoes. Crush them with a fork, add the MSG, salt to taste and bring to a simmer over medium-low heat. Keep it simmering while the pasta cooks, adding a little pasta water if it thickens too much.
- When the water is at a rolling boil, add the pasta and cook until al dente.
- About 2 minutes before the pasta is done, remove and discard the garlic and stir the 'nduja into the sauce so it melts into the tomatoes.
- Lift the pasta into the sauce with tongs or a spaghetti fork and stir over medium-high heat until evenly coated.
- Serve immediately, topped with grated pecorino.

Good to know
- Look for Calabrian 'nduja, ideally from Spilinga. Fileja (also sold as "filei") is the traditional Calabrian shape.
